Hi bdydrpranger95, For a single towable, I use the ski hook. For two towables, I just use the tie-downs and for three towables it's the tie-downs and the ski hook.

If you're not comfortable using the ski hook, a harness clipped to the two transom tie-downs will work just fine. I recommend the type that has a small float attached to keep it away from the prop.( I use this same type when we have tube wars on the water. Both tubes are connected at the harness ring so they stay together when running in a straight line. Take a few turns , when straighten out and the tubes go flying back at each other...bump, bump, bump...

Typically, tow and ski ropes tend to float on top of the water and there is always a little tension on them if you're moving, but if you're still worried about it then see if you can locate a couple of small plastic swimming pool floats that go over the lane divider ropes. Attach these to the tow ropes a foot or two from the transom and it will be harder for the lines to get caught in the prop.

As for myself, I try to never just stop if I can help unless it's an emergency, because it can throw passengers around quite abruptly and potentially cause the lines to tangle with the outdrive. Instead, I throttle down quickly then I turn around to pick up any fallen buddies or to retrieve the pooped ones

Another thing, here in California, the law says there has to be a dedicated spotter at all times when doing any water sports like skiing , wake-boarding or tubing, so there is someone always watching the ropes, gear and people in the water allowing the driver to just focus on driving.
