Temp gauge will intermittently go up to 140 then drops and stay at 100. Will move off 100 some of the time when I back off the throttle. Sending unit and thermostat new? Any trouble shooting suggestions. Thanks

I had a similar issue where the temp would creep up when engine was at a low rpm. I had a mechanic replace the water pump for the stern drive water pickup which fixed the problem.

Replace the water impeller in the outdrive & have them flush the system while they're at it.
