I always thought what you are describing is called a convertible top. I thought a bimini top was suspended by poles with straps at the front and rear keeping it up. Every boat I ever had with a top snapped to the windshield had a more stable top at speeds than a true bimini but as you say, a snap to windshield top gives much less headroom. Overton's is a source for the bimini top. Something is wrong with your convertible top set-up if it is unstable at reasonable speeds.
