Default Water Temp Gauge Problem

Hello,
I'm a newbie and I'm having a problem with my temperature gauge on my new 1996 Mariah Shabah Z200 5.7L Alpha 1 that I'm trying to sort out. It shows to warm up quick on the gauge and likes to hang around 200-225 but sometimes drops back to 165-175 where it needs to be then right back up again. No alarm has sounded and was glad of that figuring it was wrong but went ahead and replaced the impeller which was fine and the thermostat, no change. Then today I used an IR temp gun at the thermostat/exhaust and as I figured it was showing around 165 degrees. Is it more likely the temp sending unit or gauge in these cases? Also, the temp gauge will peg if I turn on the dash lights/running lights and it's the only one that won't light up and the bulb is good. Thanks for any help in advance and I hope I posted in the right place! Please let me know if I didn't.

    I'm no expert, but it sounds like a grounding problem to me if one function is affecting another. I would check the wiring and if you don't find anything, replace the sending unit. That is an easy job because I think it sits right on top of the manifold/engine that would take about two minutes.

    Thanks for the reply spinks99! I was kinda thinking the same thing on the ground issue and have been trying to find a problem but haven't yet. The only other thing it's doing I forgot to mention is it's the only gauge that doesn't light up when I turn on the running lights and it pegs like I mentioned. I'm going to look into that too. I tried to get a temp sender yesterday but no one had one in stock here and they were having a hard time figuring out which one it took as well, they suggested trying taking it out and cleaning it but I don't know if that could fix it or not if it was messing up? That's one gauge I REALLY want to have working though!
