Re: 1998 Mariah under floor access
Inside the porta potty area there is a drain hole. If you're holding enough water to make you list, you'll know because it'll come out that hole and pool on the floor once you come to a stop. The fuel panel access (at least in my old Z250) was there just for access to the fuel sender and wiring. There's not enough room to do anything else. Your best bet for removing any water is the drain plug in the transom. You can use the jack on your trailer to elevate the bow higher and any water will head to the transom.
I'm not the most familiar with the Z255 model, Are you running a dual battery setup? Are they both on the starboard side, or both sides? Are there any other heavy items on the starboard side that could be relocated to the port side? Do you have trim tabs to correct this while underway?
