I have a 2000 Mariah 250 Shabah and I want to add a bimini top to it for shade. Is there one available that is tall enough for a 6'1" man to walk under without stooping over?

Any custom canvas shop can make you a bimini with whatever height and configuration you want. However, it'll cost a bit more.

If you're on a budget, then you can go with the universal route from any of the online retailers, you'll just have to make sure and do some measuring to order the right height. I think they come in a few different heights. I wouldn't recommend mounting the primary parts to the windshield, running with a bimini up puts a lot of stress on the mounts, and you don't want to risk damaging your windshield frame or breaking the glass. Also, make sure and go with stainless mounting hardware if you want it to last more than a few years.

Any suggestions for an after-market bimini top kit replacement for my 2000 Mariah Shabah 222 ? 6 foot or 8 foot length bimini ? Taylor made seems to make several types

I bought my first one from Overton's I think. 3 bow 6 foot on a 20ft shabah. It was pretty cheap in price but quality was good. no issues in 2.5 years using it. Measured the height from the top of the fiberglass where I mounted it (outside the window about 1/2 way up the glass) and bought one that wasn't overly tall but high enough to stand under. Definitly bought rear supports for storage on the lake but not open and so that you only need front straps when open. I did find out real quick to fold it forward and strap it down to the windshield for towing as towing in place on the rear supports unzipped the cover by the wind repeatedly. I have since went with a tower mounted as the 3 bow was a PITA with the tower. Tower mounted much easier but way smaller and not nearly as much shade and sucks for rain cover!
