So I have had my 250 out a few times this season an have not had any real issues till yesterday. I idled around for half hour cleaning it up. After that I went to go cruise to a different part of the lake and it started beeping at me. After checking the gauges and seeing everything looked good at the gauges I powered down for a few min. It fired right back up without the beeping.
I'm trying to figure what is causing this issue. I could not get the beeps to come back unless I got it up above 35 or so.
Oil pressure at about 60
temp 165-170
volts 14 (could this be too high)

Oil level is correct. No leaks around the motor. I have not done anything to it since the last time I had it out and there were no beep a then.
What am I missing?

After searching for oil pressure, running temp, volts etc I ran a search on MOC for "beeping" which may have answered my question... Drive lube reservoir!

Yep, you are on the right track I think. Mine would do the same thing. If I ran it on plane for a few minutes and would come off throttle fast, my alarms would go crazy for about a minute or 2 and then go away. If I powered off like you did, and restart, mine would go away as well. I took the outdrive reservoir completely off, drained it, and noticed that the float inside of it would stick just a little bit. After completely cleaning the float, it works like a charm now.

Drive Lube Reservoir sensor. That's your culprit. Supposedly the sensor is built into the reservoir and the whole reservoir part is around $50. If you can avoid the shop, it's a cheap fix!

So I disconnected the sensor. The beeping still went off. Should I be trouble shooting oil pressure sensor and temp sensor now?

Did you short the ends together? I am not sure if that sensor should supply voltage back to dash if in an error state or if it is normal. Another words, if the float breaks voltage when low and that causes the alarm, then just removing the contacts from the switch wouldn't do anything. You would have to connect the ends together to see if the alarm stops. Once again, not sure which way it is on that float.

My understanding is Mercruiser designed the system so that if you disconnect the sensor figuring you will get rid of the beeping it wont happen and that was so it would continue to remind you that there was a problem that needed fixing.

Maybe I get around to taking it out tomorrow. I'll try to connect the ends an see if that does the trick.
The beeping acted the same though, before an after the disconnecting of the sensor.

Just take vise grips and crimp the end of hose closed ,then empty reservoir into container to reuse. With no fluid in there, mine would not slide very easy until I cleaned the shaft that the float slides on. If that doesn't work, then yes I would check and clean connection on oil pressure switch if you can.
